Carnival’s Famous Blueberry Cobbler

Some cruise desserts become legendary, and Carnival’s warm Blueberry Cobbler is certainly one of them. Served fresh from the oven and topped with vanilla ice cream, it’s simple, comforting, and one of those treats guests can’t wait to enjoy again.

Easy Blueberry Cobbler

Ingredients

  • 4 cups fresh or frozen blueberries
  • 1 cup sugar
  • 1 cup self-rising flour
  • 1 cup milk
  • Β½ cup melted butter
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350Β°F.
  2. Pour melted butter into a baking dish.
  3. Mix flour, sugar, milk, and vanilla until smooth.
  4. Pour batter over the butter (do not stir).
  5. Spoon blueberries evenly over the batter.
  6. Bake for 45–50 minutes until golden brown.
  7. Serve warm with a scoop of vanilla ice cream.

Ingredients

  • 6 cups seedless watermelon, cubed
  • 1 English cucumber, peeled and chopped
  • 1 small red bell pepper, diced
  • 2 celery stalks, chopped
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon freshly grated ginger
  • 6–8 fresh mint leaves
  • Salt and freshly ground black pepper to taste

Optional Garnishes

  • Small watermelon cubes
  • Diced cucumber
  • Fresh mint sprigs
  • Crumbled feta cheese
  • Microgreens
  • A drizzle of extra virgin olive oil

Directions

  1. Combine the watermelon, cucumber, bell pepper, celery, lemon juice, lime juice, olive oil, vinegar, ginger, and mint in a blender.
  2. Blend until completely smooth.
  3. Taste and season with salt and freshly ground black pepper.
  4. For an extra-silky texture, strain through a fine-mesh sieve.
  5. Refrigerate for at least 2 hours before serving.
  6. Ladle into chilled bowls or glasses and garnish with fresh watermelon, cucumber, mint, or feta.
